Standards

To produce a consistent and uniquely distinguishable beverage, standards must be developed for each stage of production: green coffee, roasting, grinding, and brewing. In developing these standard specifications for coffee, both objective physical factors and subjective sensorial factors must be taken into account.

To be of greatest benefit, standards should be:

  • Specific: Are measurement units and range of values well defined?
  • Measurable: What methods and equipment are used for measurement? Are the results repeatable? To what degree?
  • Understandable: Are the standards clear and unambiguous?
  • Comprehensive: Do the standards cover enough parameters to construct an overall model of the quality level desired? Are all relevant parameters covered?
  • Practical: Can the standards be met within reasonable time and financial parameters? Are the standards achievable?
  • Consistent: Can the standards in place be met consistently?
